white cane sugar

First caramelize the sugar. This is the trickiest step, so make sure you keep a close eye and stir continuously. Color should be a dark caramel.
Sear the pork on high heat to get a nice caramel color. Cook in batches as needed. Then add the shallots.
Add the coconut soda and fish sauce and take it to a boil. Skim off any impurities off the top.
Simmer on medium low heat for 1 hour.
Meanwhile boil the eggs for 7-8 minutes. When the pork is done braising, at the eggs and cook for 10 more minutes.
Serve this delicious thit kho with eggs over white fluffy rice with a side of refreshing crunchy vegetables.
