Add cut mangoes, honey and lime to a blender. Blend for 30 seconds to a minute, until smooth and pureed.
Add pureed mangoes into the ice cream machine and set on sorbet setting according to the manufacturer's instructions.

To store the sorbet, freeze your container beforehand. This helps prevent the sorbet from melting too quickly when being transferred into the container. Scoop the sorbet into the container and use plastic wrap to seal out any air pockets over the sorbet. Cover with a lid and freeze.
If the frozen sorbet is too hard to scoop out, simply put the container in the fridge to let it melt a bit.
To make sorbet without an ice cream maker, pour the pureed mangoes into an airtight container, use plastic wrap to seal out any air pockets over the sorbet and freeze for at least 4 hours. If you choose this method, the sorbet will not be creamy and may have ice crystals.
