Recommended to use a 4 to 6 pound prime rib roast for this recipe.
Generously season the roast with salt and pepper. Make sure to use coarse salt.
Use kitchen twine to tie up the roast. Tying the roast helps it cook more evenly, and you’ll get nice, round pieces when sliced!
For roasting time, multiply the weight (in pounds) of your roast by 5 minutes. Roast at 500 degrees F.
When roasting time is up, turn off your oven and leave the oven door shut for 2 hours!
