These roasted whole beets in the air fryer make for an easy and delicious side dish with very little prep and hands-free cooking! The air fryer method brings out a rich caramelized sweetness. This is a great alternative to roasting beets if you just have an air fryer appliance or simply don’t want to heat up the whole kitchen with an oven.
Wash and scrub the beets thoroughly and trim off the stems if needed.
Dry the beets and rub each beet with olive oil and sprinkle evenly with salt. Wrap each beet individually in foil and seal tightly.
Place the foil-wrapped beets (folded side up) in the air fryer basket. Air fry for 50–60 minutes at 375-400F, or until fork-tender. Test doneness with a fork or knife - If the fork slides through the center easily, then the beets are done.
Once the beets are fork-tender, use a paper towel and peel the skin off while the beets are still warm.
Slice and serve plain or add desired seasoning and dressing.
