Air Fryer Whole Roasted Beets

These roasted whole beets in the air fryer make for an easy and delicious side dish with very little prep and hands-free cooking! The air fryer method brings out a rich caramelized sweetness. This is a great alternative to roasting beets if you just have an air fryer appliance or simply don’t want to heat up the whole kitchen with an oven.

Ingredients
  

  • 4 medium whole beets
  • 1 tablespoon olive oil
  • salt to taste

Instructions
 

  • Wash and scrub the beets thoroughly and trim off the stems if needed.
  • Dry the beets and rub each beet with olive oil and sprinkle evenly with salt. Wrap each beet individually in foil and seal tightly.
  • Place the foil-wrapped beets (folded side up) in the air fryer basket. Air fry for 50–60 minutes at 375-400F, or until fork-tender. Test doneness with a fork or knife - If the fork slides through the center easily, then the beets are done.
  • Once the beets are fork-tender, use a paper towel and peel the skin off while the beets are still warm.
  • Slice and serve plain or add desired seasoning and dressing.
