This is the ultimate one pot meal, rice cooker chicken rice, made in just 30 minutes. This is a savory, fragrant and flavorful dish made of seasoned Jasmine rice with juicy bite sized chicken.
1cupJasmine rice (or other long grain rice)Use the standard 1-cup US measuring cup, not the small cup that comes with your rice cooker.
1 ½ cupchicken stock
½teaspoononion powder
½teaspoongarlic powder
½ teaspoonturmeric powder

1tablespoonbutter, salted
Chicken
8ouncechicken, boneless, skinless thighs cut into bite-sized piecesmay use chicken breast
¾ teaspoonkosher salt
½teaspoongarlic powder
½teaspoonpaprika
ground pepper to taste
Instructions
Rinse the rice - thoroughly at least 2 - 3 times or until the water runs mostly clear. Make sure to drain well (too much water will result in mushy rice)!
Prep the chicken - Cut the chicken into bite size pieces and season evenly with salt, garlic powder, paprika and pepper. Set aside.
Add the rice, seasoning, butter and chicken broth, give it a quick stir. Place the chicken pieces on top of the rice, spreading them evenly.
Cook - Wipe any water off the outer part of the rice cooker pot with a towel. Place the pot in the cooker and press the cook button -use white rice setting for multi-function cooker.
Serve - When the rice is done, give it a quick fluff and enjoy with a side of fresh cucumbers, lettuce or steamed vegetables. Add hot sauce for a kick.
