This easy rice cooker cilantro lime rice is a vibrant and flavorful dish made of white Jasmine rice infused with the fresh, bright flavors of cilantro (coriander leaves) and zesty lime.

Ingredients
  

  • 1 cup Jasmine rice Or any long grain rice
  • 1 ¼ cup water
  • ¼ cup cilantro leaves, chopped
  • 1 bay leaf
  • 1 tablespoon butter
  • 2 teaspoons lime juice or more to taste
  • ½ teaspoon kosher salt

Instructions
 

  • Rinse the rice and drain well.
  • Add rice, water, butter, bay leaf and salt to the rice cooker pot.
  • Set the cooker to start or cook.
  • When done cooking, transfer the rice into a large mixing bowl, right before serving, add the lime juice and chopped cilantro leaves, mix well and enjoy!

Notes
