Cilantro lime rice is a light, fragrant and flavorful rice dish which pairs perfectly with chicken, beef, fish, tacos, fajitas, salads and so much more! This recipe only has six simple ingredients, including Jasmine rice, and it’s so easy to make in the rice cooker!

Here in SoCal we devour Chipotle’s cilantro lime rice - who can resist this delicious-ness in a burrito or protein bowl? I crave it so often that it’s a must-make recipe for our family, and by using our rice cooker we don’t have to hover over the stove. It’s super convenient and allows us to focus on other prep during busy weeknights.

Ingredients
Jasmine rice - This variety of rice is commonly used in Asian cuisine. It is a long grain soft and fluffy rice, perfect for lime rice because it absorbs the flavors of the aromatics without ending up too dry or wet. If you don’t have Jasmine rice, you may use another long grain rice like Basmati.
Cilantro - A bright and citrusy herb that adds to the freshness of the rice.
Lime - Essential citrus for its fruity and fresh acidic flavor.
Butter - A pat or two adds a bit of savory richness to the rice.
Bay leaf - I love using bay leaf in my cooking for an additional aromatic note.

Rice Cooker – I just got a new rice cooker, the Cuckoo 6 cup Micom Rice Cooker and it cooks the fluffiest rice!
Instructions
1). Rinse the rice 3 times and drain well.
2). Add rice, water, butter, bay leaf and salt to inner pot, then press cook on the rice cooker!
3). When done cooking, transfer the rice into a large mixing bowl. Right before serving, add the lime juice and chopped cilantro leaves, mix well and enjoy!
Pro Tips
- Make sure to rinse and drain the rice well, otherwise the rice will be too soggy when cooked.
- Measuring cup used is the standard US measuring cup, not the cup that came with the rice cooker.
- For additional flavor boost, add vegetable or chicken broth instead of water with some minced garlic.
- Store leftovers in an airtight container for up to 3 days in the refrigerator.
- Cooking time will vary, depending on your rice cooker.
- Serve the Jasmine cilantro lime rice with your choice of protein and garnishes for a healthy and satisfying meal!

- 1 cup Jasmine rice Or any long grain rice
- 1 ¼ cup water
- ¼ cup cilantro leaves, chopped
- 1 bay leaf
- 1 tablespoon butter
- 2 teaspoons lime juice or more to taste
- ½ teaspoon kosher salt
Instructions
- Rinse the rice and drain well.
- Add rice, water, butter, bay leaf and salt to the rice cooker pot.
- Set the cooker to start or cook.
- When done cooking, transfer the rice into a large mixing bowl, right before serving, add the lime juice and chopped cilantro leaves, mix well and enjoy!
Notes

- Make sure to drain the rice well after rinsing it, otherwise the rice may get too mushy.
