Create perfect sushi rice effortlessly with this simple rice cooker recipe! Using Japanese short-grain rice and a quick blend of rice vinegar, sugar, and a pinch of salt, this method guarantees fluffy, flavorful rice every time.
Rinse the Rice: Wash the rice three times and drain well in a mesh strainer.
Add the 1 cup of rice and 1 ¼ cups of water to the rice cooker pot. Set the cooker to "Start" , "Cook”, or “sushi” setting.
While the rice is cooking, heat the rice vinegar, sugar, and salt in a small saucepan over medium heat, stirring until the sugar dissolves (about 30 seconds). Alternatively, microwave the mixture for 30 seconds or until warm. Set aside.
When the rice is finished cooking, spread it out on a plate or baking sheet. Pour the sushi rice seasoning over the rice, and use a rice cooker spoon to gently mix, using a slicing motion to incorporate the seasoning evenly.

Nutritional information provided is an estimate and may not be fully accurate.
A standard US measuring cup is used for this recipe, not the measuring cup provided with the rice cooker.
Tip: Be sure to drain the rice well after rinsing to prevent it from becoming too mushy.
Rice Vinegar: The amount of rice vinegar may initially seem excessive, but allow a few minutes for it to absorb fully into the rice.
For Rolls: If using the rice to make rolls, transfer it to a bowl and cover with a damp cloth or paper towel to keep it moist.
