    How to Cook Sushi Rice in the Rice Cooker

    Make delicious sushi rice in your rice cooker at home in just a few steps with this easy recipe. Made with Japanese short grain rice and a quick seasoning of rice wine vinegar, sugar and a pinch of salt—this simple method of making sushi rice is fail-proof, and will go great with your favorite sushi rolls, wraps, and rice bowls!

    We make sushi rice often because my boys love my avocado rolls. They’re such a convenient snack or on the go lunch, and taste 100 times better than the store bought rolls. Give it a try and you’ll be rolling fantastic sushi rolls in no time!

    Ingredients & notes

    Rice – Use Japanese short grain rice for sushi rice. I like using the Nishiki or Sukini brands that you can get at most Japanese or Asian markets.

    Seasoning – Rice vinegar, sugar, kosher salt. You can get the rice vinegar at most main stream stores. I use the Murakan brand.

    1. Wash the rice and drain well in a mesh strainer.

    2. Measure 1 cup of rice to 1 ¼ cup water. Set the cooker to start or cook.

    3. Make the sushi rice seasoning. In a small saucepan, heat the rice vinegar, sugar and salt on medium heat, and stir until the sugar dissolves. Set aside.

    4. Once the rice is done cooking, spread it out on a plate or baking sheet. Pour the sushi rice seasoning over the rice and use the rice cooker spoon to carefully mix (by using slicing motions with the spoon) to incorporate the seasoning into the rice.

    Pro tips

    • Make sure to drain the rice well after rinsing it, otherwise the rice may get too mushy.
    • Initially, it may look like the rice vinegar is too much, but it will take a couple of minutes for it to thoroughly soak into the rice.
    • If using the rice to make rolls, transfer the rice into a bowl and cover with a wet cloth or paper towel to keep it moist.
