    What are Air Fryer Mini Potatoes?

    Mini potatoes are small, bite-sized potatoes (often called "baby," "creamer," or "new" potatoes) that are just regular potatoes harvested early so they keep their small size. 

    In this easy recipe, they’re tossed in seasoning and cooked in the air fryer, which uses hot, fast-moving air to get that crispy, roasted texture. No oven or deep fryer required, making this dish a healthier choice.

    Are Air Fryer Mini Potatoes Healthy?

    Air fryer mini potatoes can be a healthier alternative to traditional fried potatoes because they use significantly less oil while still delivering a crispy texture. 

    For this recipe, we’re keeping the skin on, so it is slightly healthier than those without skin. Most of the good stuff—like fiber, vitamins, and minerals—is actually concentrated in the potato skin, so leaving it on is a win-win for flavor and nutrition.

    Potatoes are also gluten-free and can easily be part of a balanced meal when paired with protein and vegetables, making them a great everyday side dish.

    Ingredients

    mini potatoes, salt and pepper, garlic powder and smoked paprika
    • Mini Potatoes: I used yellow mini potatoes, but any mini potatoes will work. 
    • Olive Oil: Acts as the heat conductor to crisp the skin and helps the seasonings stick.
    • Seasoning: Garlic powder, smoked paprika, salt and pepper for a simple,  savory, toasted flavor.
    • Fresh Parsley or Chives (Optional): Added at the end for a pop of color and a fresh finish.

    4 quart capacity air fryer - I am using a  Philips Premium Air Fryer XXL that fits up 1 pound of mini potatoes. I’ve had the Philips air fryer for over 5 years, and it has consistently cooked up great recipes like air fryer beets, air fryer pork loin chops, and so much more!

    How to Make Air Fryer Mini Potatoes

    1. Prep

    Wash and thoroughly dry the potatoes. Slice them in half.

    2. Season

    In a large bowl, toss the potatoes with oil, garlic powder, paprika, salt, and pepper until evenly coated.

    3. Arrange and cook.

    Place the potatoes in the air fryer basket. Try not to overcrowd them. Keep them in a single layer for maximum crispiness. Air fry at 400°F (200°C) for 15 minutes.

    4. Serve with your favorite dips and enjoy!

    Once fork-tender and crispy, remove and garnish with fresh herbs or pair with your favorite dipping sauce.

    Pro Tips for the Crispiest Air Fryer Mini Potatoes

    1. Dry the potatoes - After washing your potatoes, pat them dry with a kitchen towel. Any leftover moisture will create steam, which leads to soggy potatoes.
    2. Do not overcrowd the air fryer basket - The potatoes should be arranged in a single layer so it cooks evenly and each piece are crispy.
    3. Keep consistent size potatoes - Try to slice the potatoes into consistent sizes so they all cook evenly.
    4. For quicker preparation - Leave the potatoes whole and increase the cooking time by 10 minutes.

    • Baby Yukon Gold: These have a naturally buttery flavor and creamy texture.
    • Red Bliss (Mini Reds): These hold their shape exceptionally well and have a slightly "waxy" texture that creates a thin, snappy skin.
    • Fingerling Potatoes: Long and narrow, these offer a nutty flavor. It's best to slice these lengthwise so the flat side gets caramelized.
    • Purple Majesty: These add a vibrant visual pop. They are slightly earthier and should be watched closely as their dark skin makes it harder to see when they are browning.

    How Long Does it Take to Cook Whole vs. Halved Potatoes?

    The cooking time for air fryer mini potatoes depends on how you cut them. Whole mini potatoes typically take about 20–25 minutes at 400°F (200°C). This will result in a soft, fluffy interior with lightly crisp skins.

    Halved mini potatoes cook faster, usually around 12–15 minutes at 400°F (200°C), and develop crispier edges thanks to the increased surface area. If you’re aiming for extra crunch, cutting them in half (or even smashing them halfway through cooking like these crispy smashed mini potatoes) is the way to go.

    • Loaded Mini Potatoes – Top with shredded cheese, sour cream, green onions, and bacon bits for a loaded baked potato vibe.
    • Herb Roasted Potatoes – Add dried or fresh herbs like rosemary, thyme, or parsley for a simple, aromatic flavor.

    How to Store and Reheat Air Fryer Mini Potatoes

    To store:

    • Refrigerate: Let the potatoes cool completely, then transfer them to an airtight container. Store in the refrigerator for up to 3–4 days.
    • Freeze: You can do this, but it’s not ideal. The texture may change and become a bit grainy after reheating. But if you do freeze them, store in a freezer-safe bag for up to 2 months and reheat straight from frozen in the air fryer for best results.

    To reheat: 

    • Air Fryer (Best Method) – Reheat at 375°F (190°C) for 5-10  minutes until hot and crispy again. This brings back that fresh-out-of-the-air-fryer texture.
    • Oven – Spread on a baking sheet and reheat at 350°F for 8–10 minutes. Great for larger batches.
    • Stovetop – Heat in a skillet over medium heat with a little oil, flipping occasionally until crispy.
    • Microwave (Quick Option) – Heat in 1 minute intervals, but note they’ll be soft and won’t stay crispy.

    FAQs

    Should I boil or parboil them before air frying?

    You can, but it’s not required. The mini potatoes are little, so they will air fry and cook evenly through.

    Can I make these ahead of time?

    You can season them a few hours in advance, but they are best served immediately after air frying. If you must make them ahead, just pop them back in the air fryer for 5 minutes to restore the crunch before serving.

    Can you cook frozen mini potatoes in the air fryer?

    Yes, you can cook frozen mini potatoes straight in the air fryer (no need to thaw!). Just add an extra 5–8 minutes to the cooking time and shake the basket a bit more frequently to help them cook evenly.

    Instructions
     

    • Wash and dry the potatoes. Cut in half. Add the potatoes to a large mixing bowl.
    • Add the oil, smoked paprika, garlic powder, kosher salt and ground pepper to the potatoes. Toss and mix well.
    • Add the potatoes to the air fryer basket, making sure line them in a single layer.
    • Air fry for 15 minutes at 400F.
