    What is Arroz Caldo?

    Arroz caldo is a Filipino chicken rice porridge infused with ginger, garlic, and safflower (kasubha). Although its Spanish name translates to "rice broth," the dish is believed to have originated from Chinese congee and evolved into a beloved Filipino comfort food.

    Traditionally served during rainy days, cold weather, or when someone has an upset stomach, arroz caldo is known for its rich, soothing broth and nourishing ingredients.

    Authentic arroz caldo is often made with a combination of glutinous rice and regular rice, creating a thick and velvety texture. It's typically topped with crispy garlic, sliced hard-boiled eggs, and green onions, then finished with calamansi juice, fish sauce, and black pepper.

    This rice cooker version skips the lengthy simmering process while still delivering the comforting flavors of traditional arroz caldo. Think of it as a chicken and ginger-infused twist on my previous rice cooker congee recipe.

    Ingredients

    • Rice - I used regular jasmine rice for this recipe to create a creamy porridge. 
    • Boneless chicken thighs - Chicken thighs stay juicy and tender as they cook. Cut them into bite-sized pieces so they cook evenly.
    • Seasoning - Fish sauce, shallot, garlic, and ginger - These aromatics build the flavorful base of the dish. Ginger provides the signature warmth that makes arroz caldo so comforting.
    • Chicken Broth - Using broth instead of water adds richness and depth to every spoonful.
    • Safflower threads (Kasubha) (optional) - Safflower gives traditional arroz caldo its signature golden color and subtle earthy flavor.
    • Green Onions - Fresh green onions add brightness and a pop of freshness when sprinkled on top before serving.

    Equipment Needed

    Rice Cooker – Any rice cooker works for this recipe, and you don’t need a rice cooker with the porridge setting to pull this recipe off. 

    If you're looking for a budget-friendly option, I recommend this simple one-button rice cooker (similar to the one I started with). It's inexpensive, reliable, and cooks rice and one-pot meals surprisingly well. A great choice if you want a no-fuss appliance that gets the job done with one press of a button.

    If you're ready to upgrade, my trusty Cuckoo 6-Cup Micom Rice Cooker is my everyday favorite. It cooks the fluffiest rice, has more cooking functions, and consistently delivers great results for one-pot meals. I've used it to make everything like my rice cooker oyakodon, salmon rice cooker, and rice cooker chicken adobo.

    Instructions

    Prepare the ingredients - Finely chop the onion, garlic, and ginger. Cut the chicken thighs into bite-sized pieces. Rinse the rice several times until the water runs mostly clear.

    Add everything to the rice cooker - Place all the ingredient into the rice cooker. Stir well to combine.

    Cook - Close the lid and start the rice cooker. Allow the mixture to cook until the rice is soft and the chicken is fully cooked.

    Stir and serve - Once the rice cooker switches to the warm setting, give the porridge a good stir. The rice will continue to thicken the broth as it sits. Ladle into a bowl and top with green onions, crispy garlic, hard-boiled eggs, and freshly cracked black pepper.

    Troubleshooting

    • Porridge is over-boiling and spilling – This is common with simple one-button rice cookers because the temperature is not regulated as well as Micom rice cookers. If the porridge starts bubbling over, cook with the lid slightly open or completely off to let excess steam escape.
    • Porridge is too thick – Rice continues absorbing liquid even after cooking. Stir in additional chicken broth or water, about ¼ cup at a time, until it reaches your preferred consistency.
    • Porridge is too thin – Let it sit on the Warm setting for 5 to 10 minutes or continue cooking a little longer. The rice will continue releasing starches and naturally thicken the porridge.

    Pro Tips to Make the Best Rice Cooker Arroz Caldo

    • Use bone-in chicken - If you want the traditional flavors of arroz caldo, use bone-in chicken for a richer, more robust flavor.
    • For a thicker consistency, use equal parts jasmine rice and glutinous rice.
    • Use freshly grated ginger for the best flavor and aroma.

    What to Serve with Rice Cooker Arroz Caldo

    • Fried tofu - A traditional addition to Filipino rice porridge. The tofu absorbs the flavorful broth and serves as the perfect protein boost.
    • Rice Cooker Hardboiled Eggs - This is another traditional addition to arroz caldo. It adds a protein-boost and serves as the perfect pair to the rich broth.
    • Pork Katsu - Crispy on the outside and juicy on the inside, pork katsu adds a satisfying crunch that contrasts beautifully with the soft, creamy texture of arroz caldo.
    • Vietnamese Pork Chops - Sweet, savory, and caramelized, these flavorful pork chops make a hearty accompaniment and turn arroz caldo into a more filling meal.

    Storage & Reheating

    To store: Transfer cooled arroz caldo to freezer-safe containers and freeze for up to 2 months. Leave some room for expansion.

    To freeze: Reheat on the stovetop or in the microwave with a splash of chicken broth or water. The rice will continue absorbing liquid as it sits, so adding extra liquid helps restore its creamy consistency.

    Why is my Arroz Caldo too thick, and how do I fix it?

    Rice continuously absorbs liquid and releases starches as it sits, especially after cooling down. If your porridge becomes too thick, simply stir in a splash of warm chicken broth or water (about ¼ cup at a time) right in the rice cooker or when reheating it on the stove to restore its creamy consistency.

    What is the difference between Arroz Caldo and rice porridge?

    Arroz Caldo is a specific, robustly flavored type of Filipino rice porridge cooked directly with a heavy base of fresh ginger, garlic, onions, and chicken. While plain rice porridge is a neutral canvas often cooked with just water or a light broth.

    • 1 rice cooker

    Ingredients
      

    • ½ cup Jasmine rice
    • 2 tablespoon Jasmine rice
    • 10 oz Chicken thighs, cut into small pieces skinless, boneless
    • 3 cups water
    • 2 cups chicken broth
    • 1 tablespoon ginger, minced
    • 1 tablespoon shallot, minced
    • 1 clove garlic, minced
    • ¼ teaspoon kosher salt
    • 1 tablespoon fish sauce
    • ground pepper to taste

    Optional toppings

    • hard boiled egg
    • safflower/saffron threads
    • fresh spring onions, cut into small pieces

    Instructions
     

    • Add 1 cup and 2 tbs Jasmine rice into the rice cooker pot. Rinse and drain rice until water runs clear, about 3 times. Drain the water well.
    • Place the rice, chicken, shallot, garlic, ginger, chicken broth, water, salt, fish sauce and safflower (if using) into the rice cooker. Stir well to combine.
    • Press cook on your rice cooker, use the porridge setting. If you do not have a porridge setting, set it to cook, leaving the lid uncovered and cook for about 45-50 mins.
    • Serve garnished with green onions and cracked pepper or other toppings and sides of choice.
