This rice cooker version simplifies the traditional method by cooking the rice, beef, and onions together in one appliance. It’s a practical shortcut for busy weeknights when you want the flavors of gyudon without standing over the stove.
Ingredients

- Thinly sliced beef - I recommend a fatty cut such as ribeye or beef blade chuck. Thin slices cook quickly in the rice cooker and stay tender and juicy. For quick and easy prep, use frozen thinly sliced shabu meat.
- Japanese short-grain rice - Japanese short-grain rice gives the dish its soft, slightly sticky texture and works especially well with the beef and sauce.
- Yellow onion - Thinly sliced onion softens as it cooks and adds natural sweetness to the beef bowl.
- Sauce ingredients - soy sauce, mirin, sugar - Combined to make the traditional savory-sweet flavor of beef gyudon.
- Dashi powder – Dashi adds a savory, umami-rich flavor to the rice and beef. Hondashi or another Japanese dashi powder works well.
Equipment Needed
A standard rice cooker is all you need for this recipe. A basic one-button rice cooker works for this recipe as long as it has a standard white rice cooking cycle.

How to Cook Gyudon in the Rice Cooker
1. Marinate the beef
Add the thinly sliced beef, soy sauce, mirin, and sugar to a mixing bowl. Toss until the beef is evenly coated, then set it aside while you prepare the rice and onions.
2. Prepare the rice and onions
Wash the rice until the water runs mostly clear, then drain it well. Thinly slice the onion.
3. Add everything to the rice cooker
Add the rinsed and well-drained rice to the rice cooker pot. Add the appropriate amount of water for the rice, mix in the dashi. Arrange the sliced onions and marinated beef over the rice. Spread the beef out as much as possible so it cooks evenly during the rice cooker cycle.
4. Press cook
Close the lid and select the regular white rice setting. Cook until the cycle finishes, approximately 30 minutes, depending on your rice cooker. Check that the beef is fully cooked before serving.
5. Fluff and serve
Gently fluff the rice and mix the beef and onions into the rice. Transfer the gyudon to bowls and add your favorite toppings before serving.
