    Fresh Spinach Artichoke Dip

    This creamy and decadent artichoke dip with fresh spinach is irresistible!  It's made with simple ingredients and comes together in just 20 minutes! Serve this appetizer dip for any occasion, like game days, potlucks, or holiday gathering with your favorite crispy chips.

    Who can resist a hot, creamy, and delicious spinach dip? This is one of my favorite appetizer, however my guacamole and oven backed nachos are a close tie! It's loaded with fresh and delicious ingredients  like fresh spinach, artichoke, and creamy cheese-y goodness. This is so much better than your typical store bought dip!

    Ingredients

    Ingredients for spinach artichoke dip.

    Fresh spinach - I like using fresh spinach (versus frozen) which has less moisture when cooked.

    Artichoke - Use canned artichoke hearts for an easier prep.

    Cheeses - Cream cheese, parmesan and mozzarella are simple cheeses that are readily available at most grocery stores, and still deliver great flavor.

    Mayo - I like adding a touch of mayo for a bit of tang and a creamier texture.

    Red pepper flakes – Add for a hint of spice. If you like more spice, feel free to add more to taste.

    Lemon - Top off this decadent dip with a bit of lemon juice and zest to give it a nice zing and balance out all the cheese and creaminess.

    Instructions

    Steps on how to make fresh spinach artichoke dip.

    1). In a medium pan, saute the garlic and onion on medium high heat.

    2). Add the spinach and sauté until the spinach wilts and water evaporates.

    3). Add the artichoke and cook for additional 1-2 minutes.

    4). Add cheeses, mayo, sour cream red pepper flakes, salt and combine it well with the other ingredients. Transfer the dip into a small casserole dish, squeeze the lemon and add the lemon zest, then give it a quick mix.

    Optional: Top with additional mozzarella cheese and place it under the broiler until browned and bubbly.

    Serve this spinach dip hot on a crostini or chip for a satisfying, melt-in-your-mouth bite!

    Pro Tips

    • Best to eat it while its hot!
    • Serve this fresh dip with pita chips, baked pita bread, crackers, tortilla chips, toasted baguette slices or vegetable sticks!
    • This is a great appetizer dish to pre make! When ready to serve you can reheat it on the stovetop, microwave it, or bake it at 350 Fahrenheit for 15-20 minutes until warm and bubbly.
    • Store for up to 2 days in an airtight container.

    You can serve the dip hot or cold. But when its heated, you get delicious, creamy cheese goodness on every dip.

    What is the best chip for spinach dip?

    It all depends on your personal preference. Pita chips are great because they're sturdy enough to stay intact when dipping. Salty tortilla chips and warm, toasted French bread sliced into crostini, which are crisp on the outside and slightly chewy inside are also great options.

    What's a healthier substitute for chips for artichoke and spinach dip?

    Carrot and celery sticks go great with this dip! Other healthy options include broccoli and cauliflower florets cut into bite-sized pieces, sliced cucumber and bell peppers!

    Ingredients
      

    • 12 ounces fresh spinach, chopped into bite size pieces about 2 bunches
    • 14 ounce (1) can artichoke hearts, chopped into bite size pieces
    • ½ cup onion, chopped
    • 3 cloves garlic, minced
    • 1 cup shredded parmesan
    • 1 cup shredded mozzarella
    • ½ cup sour cream
    • ½ cup cream cheese 4 ounces
    • ¼ cup mayonnaise
    • ½ teaspoon kosher salt
    • ¼ teaspoon red pepper flakes more to taste
    • 1 whole lemon zest
    • lemon juice to taste

    Instructions
     

    • Add about 1 teaspoon of oil to a medium sauce pot and heat on medium high heat.
    • When hot, add the chopped onions and saute until soft, about 3 minutes.
    • Add the garlic and saute until fragrant, about 1 minute.
    • Add the chopped spinach and saute until it wilts and water evaporates, about 3 minutes.
    • Add the chopped artichoke and cook for 1 minute.
    • Turn the head down to medium, add the mayonnaise, sour cream, cream cheese, parmesan and mozzarella. Stir the ingredients together until all the cheese melt together.
    • Season with kosher salt and pepper flakes. Add the lemon zest and squeeze of lemon to taste.
    • Serve dip in a dipping bowl . Optional: Transfer the dip to an oven safe bowl, add additional shredded mozzarella to the top and broil for 2-3 minutes, or until you get a brown, crispy, cheesy top.
