    Healthy Beet and Kale Smoothie

    Start your day feeling energized and refreshed with a vibrant, tasty and nutritious beet and kale smoothie. Full of fiber and antioxidants, it’s delicious and also kid-approved!

    When I don’t have time to use my Omega juicer, making smoothies in the Vitamix is the quickest and easiest way to serve a tasty, glass full of nutrients to my family. I like to use a variety of fruits and vegetables in my drinks and happily discovered that kale and beetroot are a perfect smoothie combination. It’s healthy, filling and refreshing, plus you get most of your recommended daily fruit and vegetable serving in one glass! 

    Uncooked beetroots and kale can sometimes have a bitter and earthy flavor. I’ve added coconut water, apples and oranges to add sweetness and balance out the flavors. Even my son approves!

    Beetroot - I use raw beets, make sure to cut them into smaller pieces for easier blending. 

    Kale - I use green kale leaves, de-stemmed. 

    100% Coconut Water - I love adding unsweetened coconut water to my smoothies. It’s hydrating, refreshing and full of nutrients.

    Apple - Added for sweetness to offset any earthy or bitter taste from the raw beet and kale.

    Orange - A good source of vitamin C, provides additional sweetness and juice to the smoothie. 

    Ice - A nice addition which chills the smoothie quickly.

    High-Speed Blender - I recommend a high speed blender like a Vitamix or Blendtec, which will easily blend the beet and ice into a smooth texture. If you do not have a high speed blender, I recommend cutting the beetroot into smaller pieces or you can use roasted beets instead. 

    Instructions

    Wash the veggies and fruit. De-stem the kale leaves and peel the beet. Cut the orange and apples in slices and beets into smaller pieces.

    Add everything to the blender, coconut water and ice first. 

    Blend for about one minute, or until smooth. There will be some foam that will form, but it’s okay! Add in an environmentally-friendly straw and happy sipping!

    FAQ

    Is it ok to put raw kale in a smoothie?

    Yes, as long as you put enough liquid for the smoothie, the kale will break down and blend easily.

    Do you have to cook beets before blending?

    No. A high speed blender, (which is very powerful) can easily blend raw beets into a smooth texture. Cut them into smaller pieces or use roasted beets if you do not have a high speed blender

    Equipment

    • blender (high speed blender recommended)

    Ingredients
      

    • ½ medium beet, peeled and cut into small pieces about 3 ounces
    • 3 green kale leaves, de-stemmed about 2 ounces
    • ½ medium orange, peeled and cut into slices
    • ½ medium medium apple, cut into slices
    • ½ cup ice
    • ½ cup pure coconut water preferably no sugar added

    Instructions
     

    • Add ice and coconut water to the blender. Then add cut beet, kale, orange and apple to the blender.
    • Blend on high for 1 minute, or until smooth.
