    Air Fryer “Baked” Whole Sweet Potatoes

    These delicious sweet potatoes are “baked” to perfection, they’re creamy on the inside with a crispy skin on the outside.  It’s healthy and easy, with no oil needed. Learn how to air fry whole sweet potatoes in batches for a delicious side dish, snack or meal prep.

    I love sweet potatoes of all varieties and it’s been my favorite snack while on the Whole 30 program.  They’re packed full of vitamins and fiber and are a delightfully sweet vegetable treat for the kids. Roasting them in the air fryer makes it so easy and convenient. All you need are sweet potatoes – and if you want to get fancy – top it off with an umami packed miso butter.

    Ingredients & Notes

    Sweet Potatoes – Any variety will be delicious. Some of my favorites are the Japanese sweet potatoes and Stokes purple potatoes. 

    White Miso and Butter- This is for the miso butter topping. You can get miso at Asian markets, a lot of big chain grocery stores sell them as well.

    Air Fry the Potatoes

    How to make roasted sweet potatoes in the air fryer.

    1). Thoroughly wash the potatoes, then use a fork to pierce the potatoes – 3 times on both sides.

    2). Place the sweet potatoes in a single layer in the fryer basket. Air fry the whole sweet potato for about 40 minutes.

    Miso Butter Topping

    While the potatoes are air frying, make the miso butter.

    3). Add miso to softened butter, then cream it together with an electric mixer or fork until well incorporated.

    4). Place the miso butter on a plastic wrap, fold the plastic wrap over and form a log shape, then roll it up tightly. Make sure to squeeze out air bubbles from the butter. Refrigerate until ready to eat. 

    To serve

    Top the sweet potatoes with the delicious miso butter and garnish with chives. Enjoy while they’re hot!

    Pro Tips

    • Make sure your air fryer basket is clean and grease-free before cooking. This will prevent any oil and crumbs from burning and smoking.
    • My air fryer has a 4 quart capacity and will fit three medium sized potatoes comfortably. Different basket sizes may fit more or less potatoes. 
    • Aim to use similar sized potatoes so they cook at the same time.
    • Cooking time may vary depending on the size of your potatoes.

    Bake a whole sweet potato in the air fryer for a sweet and savory roasted flavor. Top it off with a delicious umami flavored miso butter.

    • 3 medium sized sweet potatoes
    • 4 tablespoons butter, softened
    • 2 tablespoons white miso I use Cold Mountain Mellow White Miso
    • chives optional for garnish

    Instructions
     

    • Preheat the air fryer to 400 Fahrenheit for 5 minutes.
    • Wash and scrub three medium sized sweet potatoes.
    • Use a fork to pierce the potatoes – 3 times on both sides.
    • Place the sweet potatoes in a single layer in the fryer basket. Air fry potato for about 40 minutes.
    • While the potatoes are air frying, make the miso butter. Add miso to softened butter. Cream together with a mixer or fork until well incorporated.
    • Place the miso butter on a plastic wrap, fold the plastic wrap over and form a log shape, then roll it up tightly squeezing out any air bubbles. Refrigerate until ready to eat.
    • Top the potato with miso butter and garnish with chives. Enjoy while they’re hot!
