    These roasted whole beets in the air fryer make for an easy and delicious side dish with very little prep and hands-free cooking! The air fryer brings out a rich caramelized sweetness. This is a great alternative to roasting beets if you just have an air fryer appliance or simply don’t want to heat up the whole kitchen with an oven.

    Whole beets are cooked at high heat in the air fryer until tender and lightly caramelized, so it is much like traditional oven roasting. The result is fork-tender beets with a concentrated and rich roasted sweetness.

    Ingredients

    • Beets - Use 3–4 medium beets, unpeeled, washed, and scrubbed clean. I use medium-sized beets as they cook more evenly.
    • Olive oil - It helps the skins soften and adds a roasted flavor-depth.
    • Salt - Enhances the flavor and brings out the natural sweetness of the beets.

    Equipment Needed

    Any standard air fryer will work, as long as it can maintain 375–400°F.

    I am using a  Philips Premium Air fryer  that fits up to 4 medium to large size beets. I’ve had the Philips air fryer for over 5 years and it has consistently cooked up great recipes like my air fryer chicken drumsticks, air fryer salmon with skin on, air fryer pork loin chops and so much more!

    How to Make Air Fryer Roasted Beets

    1. Prep the beets

    Wash and scrub the whole beets thoroughly and trim off the stems if needed.

    2. Season and wrap

    Dry the beets and rub each beet with olive oil and sprinkle evenly with salt. Wrap each beet individually in foil and seal tightly.

    3. Roasting in the Air fryer

    Place the foil-wrapped beets (folded side up) in the air fryer basket. Air fry for 50–60 minutes, or until fork-tender. Cooking time varies depending on the beet size.

    4. Peel the skins after cooking.

    Once the beets are fork-tender, use a paper towel and peel the skin off while the beets are still warm.

    5. Slice, serve, and enjoy!

    If you can’t find medium beets and you’re wondering how long to air fry small beets or large ones, follow this air fryer beet cook time chart:

    • Small beets (2-inch): 40–45 minutes
    • Medium beets: 50–60 minutes
    • Large beets: 60–70 minutes

    Best Temperature to Roast Beets

    The general rule of thumb for most air fryers is that 375°F to 400°F works best for roasted whole beets in an air fryer. This temperature range allows the inside to become tender while still developing roasted flavor. Use these guidelines:

    • Small beets: 375°F to prevent over-browning before the center softens
    • Medium beets: 375–400°F for balanced roasting
    • Large beets: 375°F and allow extra cooking time to ensure even tenderness

    When in doubt, start at 375°F and extend the cook time as needed. Size affects cooking time more than slight temperature changes.

    Foil vs No Foil: Should You Wrap Beets in Foil ?

    Whether or not to wrap beets in foil depends on the texture you prefer.

    Wrapping each beet in foil creates a softer, more tender texture and an easy to peel skin. It also prevents the juices inside the foil.

    Roasting without foil produces a firmer texture and slightly more caramelized exterior. However, the surface may be a bit drier compared to the wrapped method.

    If you want consistently tender roasted whole beets in an air fryer, wrapping them in foil is the more reliable option.

    Pro Tips for Whole Roasted Beets

    • Check tenderness early – Smaller beets may be done around 45 minutes.
    • Peel beets straight away– it is easier to remove the skin while the beet is warm. Once the beet is cooled, the skins stick and become harder to remove.
    • Wrap tightly in foil – This prevents the beets from drying out and prevents any of the roasted liquid from leaking.
    • Test doneness with a fork or knife - If the fork slides through the center easily, then the beets are done.
